Wheatberry & Shitake Salad


It's taken me 25 years to discover that chinese mushrooms (冬菇) and shitake mushrooms are the same thing. It's just that I soak dried shrooms to reconstitute them, instead of buying them fresh from the store.

This is my first venture with wheatberries. They're basically what wheat is, before it gets processed and stripped of its fibrous shell. Raw wheat = more fiber and protein for this growing girl, you dig?

Ingredients
Wheatberries (wegman's - bulk section)
Shitake mushrooms (hoowa supermarket on sheridan and bailey)
celery
pinenuts
scallions
garlic
1/2 onion

Makes 4 servings.

Directions:
1. Soak 1/2 c wheatberries and dried mushrooms (in the same water) overnight
2. Boil wheatberries for 30 minutes, add diced mushrooms during last 5. Test the wheatberries & make sure they're done-zo.
3. Sautee pinenuts, diced celery, diced onion, garlic in olive oil
4. Add wheatberries & dried mushrooms (drained) to the frying pan.
5. Plate it out. Garnish with sliced scallions or grated cheese.

    if you ever go to whole foods and see the curried wheatberry salad at the cold salad bar, get some. its my fav thing there. so delish!

  3. DITTO the shiitake realization-- it took me several sips of shiitake broth at a french restaurant and incredulous questioning of the parentals before i believed it.
